Sausage n Mushroom Frittata

I love making frittata's !  They are such a simple and easy way to use up leftovers, you can make a personal sized one  or  a quick meal for 4 or 6 people .   As for ingredients the options are endless..  for me ,  Cheese and Eggs are the only must have .. well maybe garlic too!   

This season, we have a new vendor at the Farmers Market , CrosswindFarms :) A local goat farm , that specializes in goat cheeses ..  and even sell some of the meat.  I ended up with some of their sausages... and what better way to use up the extras than to make a frittata! ! 

You will need an oven safe frying pan for this dish :)
Start off by prepping your veggies ..  Mushrooms, Onions,  Peppers, Broccoli, Grape Tomatoes ..  

Start off with the mushrooms and onions, a nice pat of butter will help out here , just long enough to get some colour on them . 

Finish chopping everything while that is happening . Bite sized is best . The Goats sausage was very good, nice texture and very meaty !
Throw whatever you like for seasoning in with the veggies, I went with chili powder and basil  :)

Meat Lovers Sirloin & Sausage Pizza - Pizza from scratch 3 of 3

Pizza!!  Such a wonderful, versatile food!!
If you have been following along , you can skip the next two pictures.   If your just finding this link or page,  this is part 3 of 3 , this is a quick photo recipe of how to make pizza from scratch.

12 Grain Whole Wheat Pizza Crust ( Rolling pin optional :)

Assemble your ingredients.
 For the pizza toppings I used , this made enough meat for two pizzas, so if you only making one , or don't want extra .. divide the meat quantity by two. 
  • 1 pound ground sirloin
  • 1 Mexican sausage ( approx 1/4 lb )
  • 1 red bell pepper
  • 1 red chili pepper
  • 5 or 6 mushrooms ( Use your favourite, white ones were on sale :)
  • 1/2 Anaheim pepper
  • 1/2 poblano pepper
  • 1 medium red onion
  • 2 cloves of garlic
  • 3 roasted red peppers
  • 1 cup of your favourite cheese - I used Mozzarella and 6 yr old cheddar

Slice everything, except the red chili and garlic, these should be minced. 

I start the pan with a  a small hand full of onion, and a pinch of the garlic,  then add the meat.  Breaking it up with a spatula.  Cook on medium heat until lightly browned.

Save a small portion of the roasted red peppers and red onion for later.


Add all your veggies to the pan, I like to add a little S&P , and L&P at this point. Maybe a sprinkle of chili powder if your in the mood for it.
 Now is a good time to get the oven warming.  I cook slow and low, so 360F it is,  don't forget to preheat your pizza stone if using one.  Your pizza will cook more evenly. 

I like to sizzle this until the peppers are half way cooked, 5 minutes maybe . 

While the pan is on , you can grate your cheese.  I made the mistake of letting the Mozzarella  come to room temperature... made for difficult grating. 


Spread the pizza sauce over the crust, add a sprinkle of cheese , and move to the pizza stone.

Next  It's time for the good stuff,  Today I choose to pile it high!!  Try to spread it out evenly/

Once your happy with the meat and veggies, sprinkle the remaining cheese,  red onion and the roasted peppers over the pizza.  This was a meat lovers, but if you wanted to add some more cheese, it could easily become a cheesy meat lovers:)
 And into the middle of  the hot oven , for about 15 minutes. 

I like to let my pizzas sit for a few minutes before slicing. Seems to help when cutting a stacked pizza.  Leaving it on the stone will ensure its still nice and hot.

Nothing left to do now but , grab a slice and enjoy!!

Easy Chili Chicken Flat Bread - Creative Leftovers

Lost for a dinner idea?  Or just tired and not in the mood to prepare something large ? All you need some extra roasted or BBQ'd chicken ( a half a breast per person ,  or a leg or thigh each )  A few of your favourite veggies, some flat bread and cheese.  , and you can be eating great in 20 minutes :)  A little longer if you want to make your own flat bread first , but that's a post for another day ! 

Since this is about keeping it simple and easy , Ill keep the banter to a minimum and just show you how its done... 


Rough chop your favourites I chose Portobello & White Mushrooms, Red Bell Pepper, Onion, and Jalapeno Peppers ( These you might want to chop a little finer ) there is also a clove of garlic minced in there somewhere.   

I prefer to slice the chicken , but any method will work fine.  This was a honey/chili roasted breast.

Chicken Caserole .. Day 2 :) Creative Leftovers

Is anyone else like me?   Maybe one or two people eating, yet you cook for 6 , or even 10 at time... only to have to eat the same dish for 3 days in a row?   Until you so sick of it you don't make it for a year ? Well, I do this all the time ! I'm trying to stop, but for some reason .. when I grab a crock pot or a dutch oven ,  I just have to fill it up !!  LOL I am getting better , I'm down to cooking for 6 , instead of 10 like last year .  However this has taught me to be extremely creative with my leftovers turning them in to all sorts of interesting to eat treats. This week, it was Chicken Casserole. that started it off :)
This was a great dinner,  Chicken Casserole, loaded with tomatoes, onions, mushrooms,  peppers, carrots, broccoli and I used a 6 bean medley instead of potatoes for a change :)


For this dish you will need per person:

  • Leftovers, about two cups, chopped in bite sizes - Warmed up
  • One Medium/Large Yukon Gold Potato - Baked
  • Butter, Sea Salt & Black Pepper, Chili Powder
  • Mozzarella and aged Cheddar ( Or your favourite cheeses ) - Shredded
  • Oven Safe Plate or Dish

Baked your potato for about an hour at 360F, I simply wash mine and prick the skin a few times with a fork and toss it in the oven. If you don't like a crispy skin , you can wrap the spud in tin foil .
 When done,  cut it half lengthwise ,  I like to slice down with a butter knife, but I don't actually remove any potato.  add butter, and salt and pepper at this point. 

Before adding you topping,  I liked to add a little extra flavour,  a few sprinkles of chili powder and a little bit of cheese go down first.

Now the fun part!  Take your preheated casserole , and pour it over the potato.  No need to be tidy about it , this is a knife and fork kind of meal :)

Add some more cheese, and your ready for the oven again .  I leave it at 360F and cook for another 15 minutes. If your in a hurry you can switch it to broil or grill, and get the job done in 5 or less minutes.

Chicken Casserole Jacket Potato Done!!  So good , so easy, and a great way to use up almost any leftovers.  Watch out the plate will be hot!  Grab a steak knife and a fork and dig in!

Sunny Side Up Veggie Naan Bread

,I made a vegetarian dish ? On purpose ?  Wow!! How life has changed for me over the last few years. Even a year ago, cooking without meat was unheard of...   but that is a story for another day :)

So here we go,  Ill try to keep the instructions to a minimum and let the pictures do most of the talking.
I'm going to start trying Meatless Mondays soon , and seeing as I'm used to the vegetables being a side, not a main. I figured I better start trying a few ideas out.  So, this is my first on purpose vegetarian dish:


The Ingredients: S&P,L&P, red onions & pepper, mushroom's, farm fresh egg,  chili pepper, garlic clove, mozzarella and 5 year old cheddar, butter and a Whole Wheat Naan Bread.







Slice the red onions your favourite way, an add to a med/hot pan with a pat of butter. Let these sizzle while you you slice the mushrooms.

In the Beginning...

My journey into the world of Food Blogs has just begun.  If you would have told me a couple of years ago, that Id be starting a food blog today I would have said your crazy! No one wants to see my food !  Well, about a year ago I started posting some of my creations, and  the odd appetizer on my Facebook page that drew a small but loyal following of friends. Next I decided to try a Foodie Page on FB, that was three months ago this week. Not really knowing where it would take me, or if I  would even enjoy it...  and look where I've ended up! I'm starting a food blog!
I just started posting everything I made and did in the kitchen.  Next thing you know I was hooked and couldn't cook or eat anything without first taking multiple photos of it.  A few weeks into this endeavor I realized it was one of the best things Ive done, as I continually pushed myself in the kitchen.  Trying to make better tasting and looking food , delving into all things green, local, and sustainable. I tried my hand at all sorts of firsts for me; canning 25 jars of tomatoes, hand made bread, beets, homemade pizzas, hummus, spreads and even eating brussel sprouts!
Then I starting hearing the F word floating around,  it dawned on me I'm being called a foodie !  That was a little weird at first. Who me ? A foodie ?? Was hard to imagine.  Now I can't imagine it any other way.
 So that brings me to this blog.  This is just a continuation of my journey into the world of sustainable, local, hopefully organic, good food. Im excited to see where this willl take me.

Sunday Brunch Favourite: Frittata : Kobassa, mushrooms, onion, red pepper, and feta cheese.

Hand stretched pizza, with Chicken, Ham, Red Pepper, Mushrooms, Green Onions and Rosemary.  With a homemade Tomatoe and Garlic Hummus sauce, all topped with aged Cheddar and Mozzarella.

Future posts will include recipes , and a photo how to, and I'm always available if you need some help, or have any questions.
