Sausage n Broccoli Pita Pizza

Love making pita pizzas... so simple, so quick and extremely delicious !
I recently had my first attempt at homemade sausages ( Garlic n Onion ) and just happened to have a couple leftover ...  So .. I just had to try them on a pizza .

Ingredients : ( Per Serving )

1 Whole Wheat Pita 
 1 Cooked Garlic Onion Sausage ( Sliced ) 
1/4 of a Red Pepper ( diced ) 1/3 head of broccoli ( small florets ) 
1 cup of cheese , blend of mozzarella, and 5yr old cheddar ( sliced of shredded ) 4 cremini mushrooms ( sliced )
Splash of EVOO
Salt n Pepper to taste 





Crisp up the pita in the oven , 3 or 4 minutes per side at 350f 
Arrange the sliced sausage, broccoli, mushrooms and red pepper, 
sprinkle with a little salt n pepper 
Cover with the cheeses , and back into the oven on an oven safe plate 
about 15 minutes at 350F , or 3 minutes under the broiler ... 
and you are ready to eat !  





I usually leave mine in for a few more minutes as I prefer it extra crispy , however ... I was too hungry ! 


Simple, Good Food .. and the best part is its inexpensive and you can use whatever you happen to have in the fridge .

Roasted Chicken Pasta Bake

Love making comfort foods,  not only are they delicious , but they are usually very simple and cheap .... not that I overly like the word cheap ... preferring frugal , but it seems to fit !   I even named a recipe series after it .. Good Food , Cheap !  Hahaha This one certainly fits the bill with a total cost of under $10 ... and 6 to 8 servings :))   $1.25 a plate sound good for a balanced meal ?

Ingredients : 



One Pound of Pasta ( Rotini ) 
One Pound of Roasted Chicken ( leftovers )
One Jar of Stewed Tomatoes ( homemade )  
One head of Broccoli  (small florets )
One Red Pepper ( sliced )
A Handful of Cremini Mushrooms (sliced )
A Couple of Onions  (sliced )
A Couple cloves of garlic ( minced ) 
A 1/4lb of Mozzarella ( shredded )
A 1/8lb of Aged Cheddar ( shredded )
A 1/16lb of buffalo parmesan ( fine shred ) 
 


Prepare the pasta as per the packages instructions ... cutting short the cook time by a minute or two helps with the finished dish I find :)  Assemble all your ingredients ,  and start building dinner ... pasta in first ( I use my lasagna dish )  then add the chicken, onion , mushrooms & stewed tomatoes ...   season at this point , S&P , Italian Herbs ... diced garlic :) mix it up well, and pop into a 350F oven for about 20 minutes .


After twenty minutes ..  and the cheeses and broccoli , and back into the oven for another 15 to 20 minutes .  

Ta....  Da !!!   Dinner is served :)  Just let the pan rest for a couple of minutes , before digging in ...  

Portion it out , add some garlic bread or a caesar salad if you like and enjoy !  

There you have it ...  My Three cheese Pasta bake ...   you can easily substitute any .. or all of the ingredients and make it your own dish :)   I hope you enjoy !

One Pan Roast Chicken Dinner

I love roasted dinners, and they are even better if you dont have a mountain of dishes to wash afterward too !   Here's a simple, one pan method that will have you happy and full in about an hour .

 

Ingredients :
1 Broiler Sized Chicken
4 medium potatoes
1 head of broccoli
1 onion

Marinade for chicken:

1 cup yogurt
1 tablespoon chili powder
1 tablespoon honey
1 good pinch of dried basil
Salt n Pepper

 
A couple of hours before your ready to cook , take a mixing bowl , and add the marinades ingredients .. stir well .. and add the chicken , turning to cover all .  Cover and place in fridge for at least 2 hours , more is just fine ( I have left it over night before )

 
When ready , preheat the oven to 350F , and grab a large baking tray .
Chicken in the middle breast side up , pour the extra marinade over top.
Slice the Spuds into thick 1" wedges , and arrange  around the tray .. a light drizzle of oil , and a pinch of salt and pepper will help out .
Into the oven for 40mins

 
After 40 minutes , I like to have a look , and turn the potatoes .
Now , is the time to add the broccoli  ( again S&P and a drizzle of oil help )
Set the timer for 20 minutes and relax



Thats it...   portion out the chicken how you like , add a few spuds and a spear of broccoli and you have a delicious , healthy, one pan dinner :)

Sausage n Mushroom Frittata

I love making frittata's !  They are such a simple and easy way to use up leftovers, you can make a personal sized one  or  a quick meal for 4 or 6 people .   As for ingredients the options are endless..  for me ,  Cheese and Eggs are the only must have .. well maybe garlic too!   

This season, we have a new vendor at the Farmers Market , CrosswindFarms :) A local goat farm , that specializes in goat cheeses ..  and even sell some of the meat.  I ended up with some of their sausages... and what better way to use up the extras than to make a frittata! ! 

You will need an oven safe frying pan for this dish :)
Start off by prepping your veggies ..  Mushrooms, Onions,  Peppers, Broccoli, Grape Tomatoes ..  

Start off with the mushrooms and onions, a nice pat of butter will help out here , just long enough to get some colour on them . 

Finish chopping everything while that is happening . Bite sized is best . The Goats sausage was very good, nice texture and very meaty !
Throw whatever you like for seasoning in with the veggies, I went with chili powder and basil  :)

Less Words, More Food 4

I'm slowly getting caught up :)   What I really need is a full day at the PC, in a writing kind of mood.  This is the last of Decembers catch up posts, so at least now I'm in the New Year lol :)  I'm a little pushed for time , as I have dinner plans tonight... so Ill keep this one really short of words , and just show you some food!!!
Always a favourite:) Butcher's Bacon, Hand Cut chips, and farm eggs, cooked in a little bacon grease with chili . 

Free Range Beef, with mushrooms, peppers, onions and cheese on whole wheat nachos :)

Curry Turkey Tacos, with a red wine vinaigrette salad

Making Hamburger Frittatas - Creative Leftovers #3

I'll start by explaining Creative Leftovers, its a simple and easy way to use up all the extra food I always seem to cook. Sometimes even on purpose.  I know there are lots of people out there like me , that simply don't want to eat the exact same meal two days in a row. 
So today, I'm going to take two of my favourite meals , and combine them for an amazing leftovers creation.
Homemade hamburgers and Frittatas!!
I could not decide on which one to show you , so I choose three.  All using hamburgers from the night before, and all with different ingredients. 
You will need an oven safe pan for this recipe.  Cast iron,  or non stick works the best. 

Frittatas are really easy to make,   you don't need this many ingredients ... but it can't hurt either.

I like to have everything prepped and ready, bite sized pieces are best. Once you start the process going its all over in ten minutes. 

2 eggs per person is plenty, I also like to add about a 1/4lb of meat each.  Its all flexible and you can get away with almost anything. 

Don't forget to whisk your eggs.  Room temperature produces the best result.  At this moment you can add some great flavour to the dish.  I like to take a small hand full of the grated cheese, whatever herbs I'm using ( Usually Basil ) and a few cracks of black pepper.
My favourite ingredients are : Mushrooms, Onions , Red Peppers, Broccoli and Tomatoes.
Start sauteing, your veggies, I always seem to slip a minced clove of garlic or two in there as well.  About 5 minutes or half to two thirds cooked. At this point you will want to preheat your oven. 


Next up is the egg mixture, I like to shake the pan around until it looks even before adding the egg.  Be ready , and do this fairly quickly.  Pour in a clockwise motion around the pan.  Once it is starting to look like an omelet,  the edges are starting to cook, but still running on top.  Its time for the final toppings.  Depending how well done you like you broccoli , you can add it in here or ,save it for the next step.

Tomatoes, Cheese, Prosciutto salami , green onions and broccoli  are all  good for toppings. Of course we cant forget the cheese. This was freshly grated mozzarella and 6 year old cheddar. 

Into a 350F oven for around 12 - 20 minutes , depending on how many eggs you have used and the amount of cheese and toppings involved.  Just take a look at it ever couple of minutes.  You may need break the seal around the edge of the pan it get it out.  My method for telling when its done properly is, when the frittata can slide around in the pan without sticking, means the middle is done.  This also makes it a lot easier to slide it off the pan.   Otherwise you may have to cut it like pie. I simply slide it onto my butchers block and slice like a pizza.   A couple of minutes rest time before cutting will give you a nicer presentation. 
Tomato, Broccoli, Prosciutto salami, green onions, red peppers , hamburger, mushrooms and cheese make for an amazing lunch. 

Some have a little more cheese thank others. :)  Those crispy edges , to me, are the best part. 

They don't have to be all neat and tidy looking. 

They look just like an egg pizza to me :) So good, healthy, and tasty!!

Simply slice and serve, and enjoy.  They do reheat really well,  if need be.  300F oven for 10 or 15 minutes and they are as good as new. 

I'm going to try something new , and end with a photo for this post.   A couple of  important tips to remember are needed first.
Stove Top/Oven safe pan is a must.  Cast Iron is great.
Pan Size Guideline: 2 to 3 eggs - 6" -8" , 3 to 4 eggs - 8" -10" , 5 to 6 eggs - 12" pan.   
Room temperature eggs, I take them out at least an hour before.
Add broccoli, tomatoes, and deli meats just before the oven for best results.

Experiment and Enjoy, the possibilities are almost endless.

Chicken Caserole .. Day 2 :) Creative Leftovers

Is anyone else like me?   Maybe one or two people eating, yet you cook for 6 , or even 10 at time... only to have to eat the same dish for 3 days in a row?   Until you so sick of it you don't make it for a year ? Well, I do this all the time ! I'm trying to stop, but for some reason .. when I grab a crock pot or a dutch oven ,  I just have to fill it up !!  LOL I am getting better , I'm down to cooking for 6 , instead of 10 like last year .  However this has taught me to be extremely creative with my leftovers turning them in to all sorts of interesting to eat treats. This week, it was Chicken Casserole. that started it off :)
This was a great dinner,  Chicken Casserole, loaded with tomatoes, onions, mushrooms,  peppers, carrots, broccoli and I used a 6 bean medley instead of potatoes for a change :)


For this dish you will need per person:

  • Leftovers, about two cups, chopped in bite sizes - Warmed up
  • One Medium/Large Yukon Gold Potato - Baked
  • Butter, Sea Salt & Black Pepper, Chili Powder
  • Mozzarella and aged Cheddar ( Or your favourite cheeses ) - Shredded
  • Oven Safe Plate or Dish

Baked your potato for about an hour at 360F, I simply wash mine and prick the skin a few times with a fork and toss it in the oven. If you don't like a crispy skin , you can wrap the spud in tin foil .
 When done,  cut it half lengthwise ,  I like to slice down with a butter knife, but I don't actually remove any potato.  add butter, and salt and pepper at this point. 

Before adding you topping,  I liked to add a little extra flavour,  a few sprinkles of chili powder and a little bit of cheese go down first.

Now the fun part!  Take your preheated casserole , and pour it over the potato.  No need to be tidy about it , this is a knife and fork kind of meal :)

Add some more cheese, and your ready for the oven again .  I leave it at 360F and cook for another 15 minutes. If your in a hurry you can switch it to broil or grill, and get the job done in 5 or less minutes.

Chicken Casserole Jacket Potato Done!!  So good , so easy, and a great way to use up almost any leftovers.  Watch out the plate will be hot!  Grab a steak knife and a fork and dig in!

Roasted Double Stuffed Pork Tenderloins, with Roasted Carrots, Portabellos, Turnip, Red Pepper & Onion, Broccoli and Potatoes all in about an hour :)

Do roast dinners intimidate you ?  Too many pots , pans and ovens to keep track of? How would you like to be able to do everything , in the oven ?  All you need is 2 or three oven safe baking trays, lasagne pans or preferably some cast iron cookware and about 20 minutes of prep time.  The rest is simply timing.  This is something I came up with out of laziness :) For those long days , when you dont really want to cook, but know you should eat something good.  Besides,  who doesnt like a good roast dinner!  Especially without all the fuss and dishes !

The ingredients, I buy my potatoes and carrots from a local farm, so i simply scrub and do not peel them, the rest is just wash and slice:)

A little sunflower oil and chili powder for the roast potatoes :)
Next is the stuffing , I used fresh rosemary, sage , red onion, garlic,  jalapeno, chili pepper , and sea salt . 

Take your pork tenderloin , and slice almost 3/4 the way thru length wise, wash and pat dry. 

Add your minced goodness to the pockets in the pork, unfortunately I missed the next photo somehow .  But I folded the two tenderloins together . < > Over lapping each other to create 4 layers.  If you have kitchen twine or silicone straps, now would be a good time to truss it up . I couldn't find mine and just let them sit :)  Into a preheated oven @ 350F , set the timer for 30 minutes.   





 Add a drizzle of sunflower oil, honey , Lea & Perrin's , and a couple of cracks of sea salt and black pepper add them to the oven, and set the timer for 15 minutes.  While your adding the veggies, check on your pork and potatoes...




At the 30 minute mark, while adding the veggies. Check on the roast and rotate the potatoes for ultimate crispiness! 

After the 15 minute timer goes off (total cook time 45 minutes) add the mushrooms and broccoli, a little S&P, and sunflower oil.  I also lightly rubbed the broccoli tops in the pork drippings for a little extra flavour:) Set the timer for 10 minutes. 

Total cook time 55 minutes , (if your unsure of it being fully cooked, please check with a thermometer) remove the pork to a warm plate and let it rest for 10 minutes.  Check the veggies, if they are done, just leave them in the oven , but turn it off..  I tend to like them a little extra roasted , so i left it on. 

I transferred all the veggies to the pork pan, to soak up some extra flavour. Set the timer for 10 minutes and back into the oven.  On or off your choice at this point. 

After ten minutes of resting, move the pork to your cutting board.  If you like warm plates, like I do,  now would be a good time to put them in the oven.

I don't normally start by cutting it in half, but I knew I had forgotten the assembled raw pic and wanted to show the layers .  They came a part a little as I didn't tie it , but Ive got to say it worked great anyways!  Slice as you like it , I prefer large piece, and will cut on my plate. 


All that's left is to take the veggies from the oven , and arrange on a warm plate! Grab a knife and fork and a glass of red wine and Enjoy ! 

Ive got to add, the reason for the one small turnip is , Ive never liked them .. but have recently found that organic veggies are changing my previously disliked foods. So far this makes, Beets, Turnips, Parsnips and yes even Brussel Sprouts that I have enjoyed in the last month , all organic and delicious.
