One Pan Roast Chicken Dinner

I love roasted dinners, and they are even better if you dont have a mountain of dishes to wash afterward too !   Here's a simple, one pan method that will have you happy and full in about an hour .

 

Ingredients :
1 Broiler Sized Chicken
4 medium potatoes
1 head of broccoli
1 onion

Marinade for chicken:

1 cup yogurt
1 tablespoon chili powder
1 tablespoon honey
1 good pinch of dried basil
Salt n Pepper

 
A couple of hours before your ready to cook , take a mixing bowl , and add the marinades ingredients .. stir well .. and add the chicken , turning to cover all .  Cover and place in fridge for at least 2 hours , more is just fine ( I have left it over night before )

 
When ready , preheat the oven to 350F , and grab a large baking tray .
Chicken in the middle breast side up , pour the extra marinade over top.
Slice the Spuds into thick 1" wedges , and arrange  around the tray .. a light drizzle of oil , and a pinch of salt and pepper will help out .
Into the oven for 40mins

 
After 40 minutes , I like to have a look , and turn the potatoes .
Now , is the time to add the broccoli  ( again S&P and a drizzle of oil help )
Set the timer for 20 minutes and relax



Thats it...   portion out the chicken how you like , add a few spuds and a spear of broccoli and you have a delicious , healthy, one pan dinner :)

Cleaning out the crisper, 8 egg Beef n Veggie Frittata :)

I love Frittatas :) They can range from simple two or three ingredients .. to a massive clean out the fridge version , like this one I'm about to show you .  

Ingredients :) 


8 Eggs , preferable free range ( Feeds about 6 ) 
1 red pepper 
1 jalapeno 
1 large onion 
1 handful cremini mushrooms 
2 green thai chili peppers 
3 cloves of garlic 
1 handful grated mozzarella 
1 handful grated 5 yr old cheddar ( or use your favourite )  
1 crown of broccoli 
1 tomato
1 handful of asparagus 
1 knob of butter 
1 left over home burger or 8 oz of ground beef ( or leave it out for a veggie version )  


 Red & Jalapeno & Thai Peppers, cremini mushrooms , butter onion & garlic , for now :) 

After a couple minutes , add the hamburger to the pan 

When the veggies are halfway cooked , add in the rest of them asparagus , broccoli , tomato ( make sure they are all chopped to bite size :)  and a sprinkle of the cheeses on top for good measure .  

I used a large measuring cups to lightly whisk the 8 eggs together with a good pinch of the cheeses ..   pour over the entire pan , trying to keep it relatively even .  

About half way up the veggies is what I aim for :) 

Add the rest of the cheeses , and a few cracks of black pepper , give it a minute of the pan , then into a preheated 350F oven 
 After Twenty minutes or so ... it should be set .... 

  and slide right out of the pan :)   


Slice, serve and enjoy !   We had this with a nice Caesar salad :)  


That's it , Simple Good Food !   Took just over 30 minutes from start to finish , and can be served as a meal on it own ... or enjoyed with salads, chips , toast ... just about anything really !  Enjoy

Spicy Meatball Pasta Bake - Good Food Cheap

Lets try this again !  I typed this post up a week ago , only to have the whole thing disappear on me just as I was finished up . For someone that has a hard time writing , that was a major bummer....  so I took a week , and figured I would try it again . This time Ill be typing it up on Word , and will copy and paste to blogger.   I just love this series , Good Food Cheap !  What could be better ? Besides free! Hahaha that and its a one pan dinner... which is great as there is not as much clean up .   So ... here we go , first recipe post in 7 weeks for me ... where does the time go ??

You will need :

Meatballs :

3 Cloves of Garlic
2 Small Red Onions
1/2 a Large Red Bell Pepper
2 dried chili's
1lb of  ground beef
1 egg and ...
a touch too much bread crumbs ( kinda knocked the jar over .. ooops :)
To Taste : 
My chili powder
Basil
Smoked paprika
Sea salt
Black pepper,
L&P

Note : Normally I would have added mushrooms too .

Pasta Bake :

1 Pint Jar of Tomatoes, juice and all
1lb of cheese tortellini
2/3 cup of beef stock
1 1/2 cups chopped broccoli
90Gm of Mozzarella

Total Cost :    Just under $10 for dinner for four!


  Start by chopping the veggies for the meatballs :)

Add the veggies to the  beef and the spices , Mix well with your hands , and let rest for at least 30 minutes for flavour developing time :)


Roll them into balls, I decided to go with small ones this time . This made about 36 little ones.


I pan fried them in a spoonful of sunflower oil , for about 5 minutes each ( in two batches ) just long enough to get some colour on the outside of them. Preheat your oven right about now to 350F

Meatballs are browned up and, ready for the oven

 Now its oven time, the tomatoes were added juice and all , the pound of cheese tortellini and the beef stock . set the timer for 15 minutes at 350F 

 At the 15 minute mark , give it all a good stir , and set it for 15 more. Add the chopped broccoli & mozzarella at the 30 minutes in mark , and leave it for 10 more minutes.

 Total oven time 40 minutes :)) Mmm smells good!!

 My finished plate :)) Spicy Red Pepper/Onion Meatballs, with garlic tomatoes, cheese tortellini , broccoli and mozzarella . 

Well there you have one of my favourite one pot cooking meals !  Simple, easy and cheap!  Hahaha what could be better ??   Besides having someone make it for you ?  

This is the first Good Food Cheap post where I didnt break all the costs down ?  Does this work for you ? Or would you prefer a more itemized price list like i have done in the past ?
