Cleaning out the crisper, 8 egg Beef n Veggie Frittata :)
I love Frittatas :) They can range from simple two or three ingredients .. to a massive clean out the fridge version , like this one I'm about to show you .
Ingredients :)
8 Eggs , preferable free range ( Feeds about 6 )
1 red pepper
1 jalapeno
1 large onion
1 handful cremini mushrooms
2 green thai chili peppers
3 cloves of garlic
1 handful grated mozzarella
1 handful grated 5 yr old cheddar ( or use your favourite )
1 crown of broccoli
1 tomato
1 handful of asparagus
1 knob of butter
1 left over home burger or 8 oz of ground beef ( or leave it out for a veggie version )
That's it , Simple Good Food ! Took just over 30 minutes from start to finish , and can be served as a meal on it own ... or enjoyed with salads, chips , toast ... just about anything really ! Enjoy

| Red & Jalapeno & Thai Peppers, cremini mushrooms , butter onion & garlic , for now :) |
| After a couple minutes , add the hamburger to the pan |
| When the veggies are halfway cooked , add in the rest of them asparagus , broccoli , tomato ( make sure they are all chopped to bite size :) and a sprinkle of the cheeses on top for good measure . |
| I used a large measuring cups to lightly whisk the 8 eggs together with a good pinch of the cheeses .. pour over the entire pan , trying to keep it relatively even . |
| About half way up the veggies is what I aim for :) |
| Add the rest of the cheeses , and a few cracks of black pepper , give it a minute of the pan , then into a preheated 350F oven |
| After Twenty minutes or so ... it should be set .... |
| and slide right out of the pan :) |
| Slice, serve and enjoy ! We had this with a nice Caesar salad :) |

7 Pepper Birthday Chili
Whats your favourite Birthday meal ?? Mine is a nice juicy steak, with a jacket potato ... but this year for the first time in ages , birthday dinner with Mum ( We share the same Bday ) was a few days early ... leaving me with a big question ... What to have on my Birthday !! It didnt take long to realize Id been craving chili all month .. so Chili it was !! Simple, Good Food !
Basic Ingredients ( I dont cook with a recipe , or even write anything down hahaha )
2 lbs of Ground Beef from local butcher
2 large mexican sausages from local butcher
1 lb of braising steak , Crossrib - Flour for dusting
4 tins of Beans ( Unico , 3 Red Kidney , 1 Romano ) - I prefer dried , but am using up old stock
2 large sweet red peppers
2 large chili peppers
2 cayenne chili peppers
6 long green chili peppers
3 small dried red chili peppers ( Very hot ! )
8 medium onions
1 head of garlic
1/2 tin of chipolte peppers
2 green bell peppers
1 pint of dark ale
1 pint roasted tomato sauce ( Homemade )
1 quart of stewed tomatoes ( homemade )
Chili Powder, L&P, Sea Salt & Black Pepper
In the meantime, I rinsed and boiled the tinned beans ... rinsed again and added to the slow cooker
MmmmMmmm I do hope you enjoy my spicy chili , this one was quite the sweat inducing bowl of goodness !! I wouldnt change a thing .. but if your not a big fan of spicy, i would cut back considerable of the hot peppers and add more sweet :)

| Start by sauteing the onions ... transfer to slow cooker when done |

| Next step, the beef , best to add flavour here , chili powder, S&P, L&P, and half the can of beer |

| While the beef is browning ... add in the beans, stewed tomatoes , and roasted tomato sauce |

| Once the ground beef has finished, add the sausages , and cubed and flour dusted steak .. just need to brown these , then add to the slow cooker |

| Once done with frying ... use the other half of the beer to deglaze the pan , add to the slow cooker, this is some amazing flavour here ! |

| Its starting to look like chili :)) Let simmer for 2 hours |

| Once the base chili has simmered , its time to add the peppers in for the last 1 to 2 hours of cooking |

| All sliced and diced, and ready for the pot!! |

| Five hours after slicing the onions ... CHILI! Mmmm its time to eat ! |

| The leftovers.... usually i portion this out and freeze it up for easy meals later , this time I decided to pressure can it ... a future post maybe ?? |

Eating Local,even in Winter
While working in the fields of a local organic farm last summer, I had a lot of time to think ... One of the many bonuses to working outside with your hands :) During harvest season life was great , fresh local veggies everyday , just picked 10 minutes before heading home :) But what about winter ? When I can't just simple pick something fresh, either from the field or from the grocery store. I decided this year , I was going to challenge myself to continue to eat local thru the worst two months for fresh, local food here. January and February ... So i started stocking up , between a few farms and my own garden I managed to pack away a few hundred pounds of veggies... lots to see me thru the two months I promised myself. Quick numbers are 150 lbs of potatoes , 75lbs of acorn and butternut squash, 100lbs of tomatoes, jarred and frozen as a garden sauce, 50lbs of red peppers mostly all roasted and frozen , along with onion and garlic ( quick flavour adders ) ,100lbs of onions and 50 head of garlic . I did have ambitions to put away more, but simply ran out of time and freezer space ... It didnt help that the 20lbs of carrots went bad on me lol .. Looks like I wont have a huge variety to choose from , but it should be fun , and best of all LOCAL :)) I'm already thinking ahead to next year ... more frozen soups or puree's for sure , and more root vegetables carrots, parsnips, turnips etc... More variety in canning , not just tomatoes :)
Four weeks in , Im really craving a nice big Caesar salad lol .... but its been fun, Here are a few of my creations so far :)

Gardening In June
First off. I must apologize for being so far behind on my blogging , I just can not seem to get my writing mood working properly . Now lets get caught up :))
June is an exciting month to be gardening ... everything is starting to takeoff, and if you planned it well, you can even have a few salads , and some tasty early crops. Radishes , lettuces, spring onions, even peas ... plus of course the herbs. MmmmMmmm so exciting to watch, kinda painful to have to wait for it all though !
That brings us up to July ! Ill be doing a two part post for that as there is so much going on !! I have a garden journal , so If I have skipped something , or not explained it fully .. please just leave a comment below , and Ill happily fill in any blanks!! Either that or jump over to my Facebook page , and check out the daily goings on there.

| My 1st 3 sisters plot is doing well., I should have waited a few more weeks before planting the beans though , they ended up going a little wild without a nice corn stalk to grow up . |

| 1st week of June, everything is safe from frost now , cold frames have been removed... its time to grow!! |

| The maple sticks were plenty strong enough to support the peas, but for future reference , make sure they are dried!! Hahaha they started sprouting on me. |

| June is great for lettuces.. not too hot . Mmmm fresh garden salad! I'm not very good at thinning , but am getting better .. esp. now that I just eat the thinnings. |

| Basil :)) My favourite herb. This year I'm growing most of it in containers, and only one test patch in the ground. |

| By mid June .. the peas were flowering!! |

| Mid June again , my first full salad from the garden .. lettuces, radishes, onions, and a few herbs. |

| I cut a large bunch of my oregano, and hung it in a breezy sunny spot to dry out. Funny, i don't like fresh oregano, only dried. |

| June is full of flowers!! These are Scarlet Runner Beans. |

| Radishes are a great early crop, in less than a month you are eating them! |

| By the 3rd week of June , things are really starting to pick up! The squash is starting to sprawl out :)) |

| Same with the peas, by the 3rd week ... I'm eating them on every trip to the garden . |

| My Bright Lights Swiss Shard is doing amazing , and tastes just as good! |

| This radish was growing for about 35 days ! It was huge :)) |

| The peas finally climbed the chair :)) Will be drilling a few holes in the seat for next season ... to let a little more water underneath . |

| By the end of June , the onions I left in the ground last fall have gone to seed. Time to clip the heads and try and save some. |
